Hummus w/ carrots and sprouts for me.

Avocado Delight sandwich (stolen from Veg Web):

Veganaise, sunflower seeds, avocado, tomatoes, sprouts.

(Optional: tofu, vegan cheese alternative)

It sounds bizarre to put sunflower seeds on a sandwich, but it's crunchy, satisfying and delicious.

Leftover baked beans is actually really good between two slices of bread.

I assume you're just slapping sandwiches together quickly before work in the morning, so I won't suggest anything too labor intensive. However, it's really simple to make falafel patties for sandwiches. Buy the pre-made mix packages, add the water like the instructions say, but form burger sized patties instead of little balls. Add ketchup, mustard, tahini sauce, or whatever you please. The delicious flavor of falafel will keep any man vegan.

You could also just spice up a classic peanut butter and jelly. I like to stick some shredded coconut in mine. Always a nice little treat, and it seems so exotic...

I like the crusty soy parmesan grilled sandwich out of How It All Vegan, my variation goes a little something like this: soy margerine spread on two pieces of bread and sprinkled with the soy parmesan, vegan cheese (I use Tofuitti), sprouts, avocado, mushrooms, and green pepper GRILLED. DEE-LISH. And it takes about 10 minutes to assemble and cook. And about one minute to shovel that goodness into your mouth.

My FAVORITE sandwich is peanut butter and sliced dill pickles. Yummy. I ate 3 PB and pickle sandwiches last night. Also really good for when you're loopy.

PB and tomatoes is good, too, as is PB and apples, PB and banana, and PB and shredded carrot.

I'm kind of a peanut butter freak, if you haven't guessed.

Just kidding, I'm getting loopy this weekend, but I'll be Knoxville at the time, far away from home. Will have to wait till next week(end) to try it.

I make oat-patties (I got the idea from Isabella) and freeze them. They make great sandwhiches. It's basically a cup of rolled oats cooked in a cup of broth. I usually add onions. You can add mushrooms, garlic, or whatever. Then you form it into patties and bake on 350 f. for about 30 minutes. I freeze them and take them out as I need them. I let them thaw throughout the day while I'm at work and them pop them in the microwave at lunch time. They are good on whole wheat toast with lettuce, tomato and mustard. They are also good as an open faced sandwhich with gravy. Yummy!

I've also made black bean burgers cooked the same way. Just puree black beans with some lemon/lime juice and add some flour to make a thick batter and then bake. Add garlic or whatever you like. These are yummy too!
