I like apples, walnuts, grapes, shredded carrots, thin sliced celery, thin sliced red onion, green olives, with a balsamic vinegrette. I have crumbled extra firm, pressed tofu in the balsamic to marinate

Garbanzo beans, pepper, tomatoes, black olives and onion dressing

And, I love a diced warm Boca chik'n over greens with the onion dressing

In addition to what silva said, i like to add orange slices, raw sunflower seeds, cubed tempeh, cooked wild or brown rice, spicy leaves like endive or basil or mustard greens, other leafy greens mixed in there for texture like kale or collards, avocado, lemon juice, ground black pepper, peanut butter, dried cranberries or fresh ones...

I make a coleslaw sometimes with savoy cabbage, shredded carrot, apple, raisins, onion, and a dressing consisting of maple syrup, dijon mustard, cider or rice vinegar, and a little water mixed together and rubbed into the coleslaw.

Last night I made a homemade ranch dressing using silken tofu. It was similar to this one:

Another popular salad is to take some chopped raw kale and rub it with fresh lemon juice. Add some avocado pesto or mashed avocado to it and some ground black pepper, maybe some tomato. No other ingredients needed. This is an awesome salad!
roast/grilled/fried cashew nuts are nice.
garlic
sweetcorn
OH Naturebound! I made that silken tofu ranch, and like every other silken tofu dressing I made it taste like a chip dip! Or maybe I just really really want chips and dip... I added a tablespoon of horseradish, which was too much really, but it was so good. I made a sandwich with that and a thick fresh tomato slice.
I had extra firm silken so it was very thick!

In addition to what has already been mentioned: radishes, sliced cucumbers, cauliflower, broccoli, zucchini, lightly steamed green beans, various nuts, pumpkin seeds.

I do have to say that my standby to turn a salad into a meal is chickpeas/garbanzo beans.

Also, instead of lettuce, salads can have as their base: pasta, quinoa, freekeh, couscous, rice, or other grains.
