a super easy, no-bake vegan recipe from The Farm Vegetarian* Cookbook:

Banana Tofu Cream Pie

Blend in order given:

2-3 ripe bananas
2 tsp. pure vanilla
1 Tbsp. lemon juice
1/2 cup oil
1 cup sugar
1/4 tsp. salt


2 1/2 cups firm tofu

Blend all ingredients until creamy and smooth. Use a rubber scraper to help blend in the tofu.
Pour the thick creamy blend into a prebaked pie shell and chill for 2-3 hours. Before serving, slice another banana in rounds and decorate the top of the pie.
this is a sure hit (even amongst omni's) at any potluck.
