a super easy, no-bake vegan recipe from <i>The Farm Vegetarian* Cookbook</i>:<br><br><div class="quote-container"><span>Quote:</span>

Blend in order given:<br><br>
2-3 ripe bananas<br>
2 tsp. pure vanilla<br>
1 Tbsp. lemon juice<br>
1/2 cup oil<br>
1 cup sugar<br>
1/4 tsp. salt<br><br>
Add:<br><br>
2 1/2 cups firm tofu<br><br>
Blend all ingredients until creamy and smooth. Use a rubber scraper to help blend in the tofu.<br>
Pour the thick creamy blend into a prebaked pie shell and chill for 2-3 hours. Before serving, slice another banana in rounds and decorate the top of the pie.</div>

Sounds like an Oreo pie crust is in order here!<br>
Would that be tofu straight from the package, or pressed first?

<p>Banana and Tofu? I eat both but I never try to combine it or to make them pie and I never thought it's possible! Really amazing recipe, this one must be try too!</p>
