Banana Nut Bread

Category: Breads

Suitable for a: vegan diet

Ingredients:

3/4 cup sugar

1/2 cup oil

2 flax eggs (2 T ground flax + 6 T water)

1 cup mashed banana (about two ripe bananas)

1 3/4 cup flour

2 t baking powder

1/2 t baking soda

1/2 t salt

1/4 cup coarsely chopped nuts

Instructions:

------------------------------------------------------

Sift together flour, baking powder, baking soda, and salt. Mix together the sugar and flax eggs. Mix the mashed bananas, oil and nuts into the sugar mixture. At the flour mixture and combine. Pour into a 9x5 greased pan and bake at 325°F for one hour.

This is awesome and so easy! I made it last night; I used whole wheat flour instead of regular (white? I'm not much of a baker
) because it was all I had, and it turned out great! Still has a little of a whole wheat bite, but it makes it really hearty, and is a good breakfast bread!
