These are great and threading off the breakfast suggestions I thought I'd post the recipe here<br><br><br><br>
Blueberry Pumpkin Muffins<br><br><br><br>
1 cup canned pumpkin<br><br>
1 cup orange juice or apple cider<br><br>
1/2 cup real maple syrup<br><br>
1/2 cup canola oil<br><br>
2 tsp vanilla<br><br>
2 cups whole wheat pastry flour<br><br>
1 cup whole wheat or oat flour (process rolled oats until floury)<br><br>
1 cup pecans or walnuts ground to a fine meal<br><br>
1 1/2 tsp baking powder<br><br>
1 tsp baking soda<br><br>
1/2 tsp salt<br><br>
1`- 1 1/2 tsp cinnamon<br><br>
1 cup fresh blueberries<br><br><br><br>
Struesel Topping<br><br><br><br>
1/2 cup oatmeal<br><br>
1 tsp cinnamon<br><br>
1/2 cup pecans or walnuts<br><br>
Pulse together in food processor until nuts and oatmeal are chopped, but not too fine.<br><br>
Stir in 1/4 cup maple syrup and 1 tbl canola oil to make crumbly topping.<br><br><br><br>
preheat oven to 350 and lightly grease 12 cup muffin tin and dust with wheat germ. Beat together the pumpkin, juice, syrup, oil and vanilla. Set aside. In a large mixing bowl sift together the dry ingredients. Make a well in the dry ingredients and pour in the wet. Stir just until moistened and the fold in blueberries. Try not to overmix, but make sure dry ingredients are wetted through. Pour into muffin tins and top with struesel. Bake for 35 minutes. Cool 10 minutes in pan then gently remove and finish cooling on a rack.

Wow, those sound delicious! I adore blueberry muffins, and I love pumpkin breads of sorts...sounds great! <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">
