Avocado Bread

Suitable for a: vegan diet
Ingredients:

1 cup flour
1/3 cup sugar
3/4 t baking powder
1/4 t baking soda
1/4 t salt
1/4 cup mashed avocado
1/8 cup soy yogurt
1/4 cup milk
Instructions:
------------------------------------------------------
Mix the dry ingredients in a bowl.
Add the avocado and the soy yogurt. Add the milk while stirring.
Pour into a greased loaf or casserole pan. Bake for about 35-40 minutes at 375, or until toothpick comes out clean.
Additional comments:

I did this as a half-recipe, so it's pretty small. Double the amounts above to make a "normal" sized loaf (I baked mine in the bottom of a casserole dish).
For the yogurt, I'd recommend plain, but I used strawberry, and you couldn't detect any berry taste.
