Avocado Bread<br><br>
Category: Breads<br><br><br><br>
Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>
------------------------------------------------------<br><br><br><br>
1 cup flour<br><br>
1/3 cup sugar<br><br>
3/4 t baking powder<br><br>
1/4 t baking soda<br><br>
1/4 t salt<br><br>
1/4 cup mashed avocado<br><br>
1/8 cup soy yogurt<br><br>
1/4 cup milk<br><br><br><br><br><br>
Instructions:<br><br>
------------------------------------------------------<br><br><br><br>
Mix the dry ingredients in a bowl.<br><br><br><br>
Add the avocado and the soy yogurt. Add the milk while stirring.<br><br><br><br>
Pour into a greased loaf or casserole pan. Bake for about 35-40 minutes at 375, or until toothpick comes out clean.<br><br><br><br><br><br>

I did this as a half-recipe, so it's pretty small. Double the amounts above to make a "normal" sized loaf (I baked mine in the bottom of a casserole dish).<br><br><br><br>
For the yogurt, I'd recommend plain, but I used strawberry, and you couldn't detect any berry taste.

This sounds interesting. Does it actually have an avocado taste? I love avocados and I love bread, I'll have to give it a try.

So, it's not a yeasty bread...is it anything like zucchini bread? Would you consider it more like a dessert instead of a bread that you would use to make a sandwich? <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

It's definitely sweet, like zucchini or banana bread.<br><br><br><br>
As for the "milk substitute"...soy milk IS milk, yeah? >p

Seems like a shocking thing to do to the decadent avocado. Then again, this could be something to use for overripe avo's! hmmm...

Yeah, but I hate how when I get the motivation to do something, like make avocado bread, I don't have any avocados and the ones I get in the store won't be ripe at all....so it will be days by the time I actually make it and by then I probably won't want it!! Same thing with bananas....but I'm still going for it!
