As a child of the Midwest, cheese always has been an important part of my diet. I was raised on grilled cheese sandwiches, and I lived for the cheesy hash browns that inevitably graced the table at potlucks.<br><br><br><br>
But meat played a pretty dominant role in my diet as a child, too, though I was able to give it up overnight without looking back. Yet the thought of leaving dairy behind is way harder to stomach. So as an experiment, I decided to pick up a variety of nondairy and vegan cheeses to see if I could find an easy vegan substitute.
