applesauce raisin walnut bread<br><br>

Suitable for a: vegan diet<br><br><br><br><br><br>
1 c sugar<br><br>
1 c applesauce<br><br>
1/3 c oil (or 1/6 c oil and 1/6 c water)<br><br>
3 T milled flax seed mixed with 1/2 c water<br><br>
3 T rice milk (or soy milk)<br><br>
2 c flour (white or 1 c white and 1 c wheat)<br><br>
1 t baking soda<br><br>
1/2 t baking powder<br><br>
1/2 t cinnamon<br><br>
1/4 t salt<br><br>
1/4 t nutmeg<br><br>
1/2 c walnuts<br><br>
1/2 c raisins<br><br><br><br>
topping (optional)<br><br>
1/4 c brown sugar<br><br>
1/2 t cinnamon<br><br>
1/4 c chopped walnuts<br><br><br><br><br><br>
mix sugar, applesauce, oil (or oil and water), flaxseed mixture, and rice or soy milk together in a large bowl. whisk until oil is completely incorporated. then add flour, baking soda, baking powder, cinnamon, salt and nutmeg and mix well. stir in walnuts and raisins. oil 1 large or 2 small loaf pans (also works as muffins) and add batter. sprinkle with topping if desired. bake at 350 for 1 hour, covering loosely with tin foil after 30 minutes.<br><br><br><br><br><br>
