I would normally not use store bought cake mix but I am in a hurry. I have bananas and energe e which would be better for a white cake mix?

The banana will make it taste like banana cake, which is ok if that's what you're going for. I've used Ener G before and it turned out ok, but the cake was pretty fragile and fell apart.

I use EnerG egg replacer with cake mixes. I have better results if I add a small amount of tofu as well. It keeps the cake together better than just using the EnerG

Hhhmmm.... Tofu in the cake. That would be fun with people who seem to think tofu is gross because that's how it's been portrayed on TV, movies, etc. However, I would definately like to make some tofu stuff.<br><br><br><br>
Actually, a banana cake sounds yummy. Chocolate banana.... Yum.<br><br><br><br>

I'd use a combo of both - Energee is very useful but doesn't "quite" work perfectly... but in combination with one of the following: tofu, bananas, applesauce or a flax-meal-and soymilk "goo" - it makes a near-perfect egg product for baking... You just need to experiment with amounts for best results - which is hard when you only have one cake/recipe to work with...
