Both mixes are vegan but the instructions understandably require egg. Has anyone made either of these with an egg replacer (like Ener-G), and if so, how did everything turn out?<br><br>
I would just buy a box of each and try them out myself, but my local stores don't carry them and the best option online is actually to buy the boxes in bulk from Amazon, so I don't want 12 boxes of something that isn't good when made with an egg substitute.<br><br>
Any help would be appreciated.

I've tried the cookies without eggs. Err...didn't turn out well. They were like little hockey pucks. I used apple cider vinegar with soymilk as the substitute, so maybe they'd be better if you use EnerG or another egg replacer.

Any reason why you want these mixes specifically? I would probably just find a vegan/egg free recipe for chocolate chip cookies (like <a href="http://www.theppk.com/2008/11/chocolate-chip-cookies/" target="_blank">this</a>) or coffee cake, rather than go to the trouble of ordering large quantities of a mix online.

I have used both mixes, the coffee cake is yummy <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"><br><br>
For the cookie mix I used applesauce and a little extra baking soda for the egg<br><br>
For The coffee cake ived used applesauce too, also flax works well with it

By the time you buy 12 boxes of mix, you may as well buy the ingredients seperately!<br><br>
Ive made cakes from boxes before (not these specifically). Always turned out fine. I once read a 'diet tip' that said to use a can of diet soda instead of eggs to save calories in cake mixes. I ignored the calorie bit, and used normal soda. It works great and flavours the cake.

When you don't want to use eggs, use applesauce. The main thing about eggs in a batter is that is acts as a "glue" to hold everything together. So you just need something of that consistancy to go in the batter. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"> Also, the suggestion about soda is spot on! I once made my mom a vegan Cherry Coke Chocolate cake, and she loved it. (And she's an omni.)

If I were to use applesauce or soda instead of egg, how much of each would be the equivalent of one egg?

1/4 cup of applesauce......you need to understand, changing soda for an egg is NOT the same thing,and you won't get the same results....it's just another way of doing things.....when you start increasing the number of eggs having to be replaced, at some point ( I don't remember when either) you don't replace equally, or you're going to have a really wet mess with all of the applesauce.
