Anyone else doing a vegan Thanksgiving?

Hi all,
I usually don't do anything special for the holidays, as I go solo (by choice - I prefer to stay away from the chaos of the holidays, plus family and friends live too far away to meet up). However, I have a local Sprouts and when I was shopping last week, I noticed they had Tofurky and Gardein roasts on sale and also some vegan desserts. So I decided to give holidays this year a whirl.

So I'm doing a Gardein roast with roasted veggies and whole cranberry sauce. I also found an organic vegan cherry pie (prefer cherry over pumpkin) so that's on for dessert.

Anyone else doing a totally vegan Thanksgiving?

The Gardein roast is fantastic ;) my family and i have had a vegan thanksgiving for the last decade or so. ^_^

Seems silly that omnis profess their thankfulness over a dead tortured bird.

My Thanksgiving with Mom, sister, and my husband is going to be totally vegan (and gluten free to boot). We've been doing this for a few years now. My husband's family had their meat eating Thanksgiving last week. Ugh.

I am making a sauteed stewed tomato, zucchini, green pepper, Beyond Meat "chik*n" strips over rice and I am making red skinned mashed potatoes. I also made a gluten free vegan apple pie with homemade crust for top and bottom (used almond flour, oat flour, sorghum and white rice flours). My sister will bring something too but I don't know what. Oh...and I found So Delicious coconut Cool Whip! I have died and gone to heaven lol. I tasted it and it was awesome, and very thick and creamy like traditional cool whip.

My husband and our adult son and daughter are having a vegan holiday. Daughter is an omni but loves vegan food and is coming over early to help cook.

We also are having the Gardein roast, mashed potatoes, roasted butternut squash, acorn squash stuffed with wild and brown rice with cranberries, walnuts, mushrooms. Also my son is concocting something in the crockpot. What else? Oh asparagus roasted, and broccoli cooked in some way. Some nice seedy rolls. A few desserts. :D

I am solo this year as well, but I wanted something festive. I have a Tofurkey (I wanted to get a Gardein, but Sprouts was sold out of them.) I'm doing a cranberry orange sauce, yukon gold mashed potatoes, and I'll probably roast some carrots around the tofurkey (which I forgot to thaw...guess I'll be using the "frozen" directions, sigh.) And I'm getting a vegan apple pie from Whole Paycheck tomorrow.

I'm missing my mom. She made the best apple pies ever. She was about 70% raw when she passed away and would have been completely supportive of a vegan Thanksgiving. She always accommodated me when I gave up red meat or tried to eat low fat. I was really blessed in the mom department.

We always do a vegan thanksgiving. Everything made from scratch. and a day for us to appreciate having the ability to be able to eat such food and so much of it.

I don't care for the standard holidays, plus I'm pretty much a drama-free, crowd-shunning loner.... I have no siblings, no munchkins (**shudder**), my folks are going to a small yet "traditional" feast this afternoon... my best friend cooked a huge boiled dinner for his mom, to be eaten about now.... Later, at his house, I'll continue cooking my roasted vegetable soup I started last night... just for something to do. LOL **shrug**

An unexpected thing to be thankful for: My adult daughter is omni (we went veg when she was 14ish years), and she said yesterday that both she and her boyfriend have been talking about going vegetarian lately! She loved the "from scratch" dishes and didn't like the gardein roast lol. She has eaten vegan when she is here of course, and likes vegan food, but has always said she wouldn't go veg. So happy about this change!

From the tofurky site, just so we can all feel extra good about turkey free Thanksgivings:

Pounds of grain needed to make one pound of turkey meat = 4.87lbs.
Pounds of grain needed to make one pound of Tofurky Roast = .47lbs.

I made mashed potatoes, green beans, gravy, and a pecan pie for my dad and I. My dad made a cauliturkey (cauliflower and veggies in the shape of a turkey). Since it was at my omni uncle's house, my omni family members had their own food.
