I'm totally with you on crockpot cooking in summer -- I like the fact that I can put everything together at 11 o'clock at night when it's cool (I refrigerate it and start the crockpot before I leave for work in the morning).

I've been using Fresh From the Vegetarian Slow Cooker a lot lately. It has some really good recipes!
