This is one of the few thing that I can't think of a replacement for.

I stumped Chef Deb! I didn't think it could be done. Here's a link to her response. She suggested a sponge cake instead.

http://www.vegsource.com/talk/recipe...ges/73434.html

I loved angelfood cake when I was a child, it was my absolute favorite kind of cake. I've been waiting patiently for someone to post a idea, or recipe before my birthday. I'm so disapointed.

yes, sadly, there really isn't a good vegan replacement for egg whites. soilman has had a lot to say about the inadequacies of egg replacers, and i suspect the problem is replicating the gelling properties of egg whites. nothing vegan can really fluff up and congeal quite the way egg whites do. sorry.

That's what I was afraid of. I used to love angel food cake with strawberries.

what about veganfood's angelfood recipe? the note sounds like it isn't a tried and true recipe, but it's an idea. maybe somebody should try it and report back on the results, then share any suggestions for improvements. i'm too much of a lazy cook to try it myself, but i hope it'll work for you guys.

Here is my strawberry shortcake recipe (real shortcake). It's good

1 1/4 cup flour

3 T sweetener

1/2 T baking powder

1/8 tsp salt

1/4 cup vegan margarine

1/8 cup chopped pecans

1/2 cup soymilk

mix the first 4 ingredients together. Cut in the margarine with a pastry blender or knives. Then stir in the nuts and soy milk.

Form into a round cake and bake for about 15 to 20 minutes at 400.

slice some strawberries and sprinkle a little sweetener on them.

1/8 cup soy milk

1-2 T sweetener

1 tsp cornstarch

drop of vanilla or lemon juice for flavour

1/4 cup oil

place the first four ingredients in a blender and begin to mix. slowly drizzle in the oil. blend until thick and cool for an hour

spread the strawberries over the cake (you can layer it if you want) and then cover with the whipped topping

Shucks... well, I'll make some other stuff. Hmm, sponge cake ..or shortcake... Yeah, egg replacer does not really replace all the qualities of eggs. Still hoping though.

I'd try the vegan food recipe, but I'm afraid it might not work.

Even if angel food has not been replicated, I think now is a good time to be vegan. All the thourghly decent margarines, organic produce, yogurt, wierd soy cheese, online veggie chatboards *big hugs to all*, soy milk....
