Hi there,
I wanted to try mustard greens because I recently read that they are good for bringing down triglycerides. I also want to up my greens consumption. I already eat a lot of baby spinach, baby mixed greens, kale, and various lettuces, but I want to try some new ones. I thought I might saute them with some garlic and evoo, but they taste pretty good raw, too. Any other ideas?

Thanks, Laura

Try this hope you like this

1 lb. fresh green beans
1/4 c. butter
Juice of 1/2 lemon
1 heaping tbsp. French's Dijon mustard
3 tbsp. sliced almonds

Steam green beans until just done. They should have just a little "crunch". In medium saute or frying pan, melt butter over low heat; add Dijon mustard. With a wire whisk blend together well.

Add lemon juice, continuing to stir; let come to a boil. Turn off heat. Toast sliced almonds in small saute or fry pan until golden brown; set aside. When beans are ready, drain completely. Pour Dijon sauce over beans and toss. Sprinkle toasted almonds over top; serve. Serves 4.
