Personally I wouldn't compromise on the meat issue, but when it comes to milk, eggs, e.g., I would be more careful. Although all of us know that veganism is a healthy lifestyle, it is unfortunately perceived as an extreme diet among the general public. Let them have their (preferably ecological) milk and eggs. Vegetarianism is radical enough for most people.

If you make sure to have vegan alternatives available, they would naturally be curious about testing out the alternatives. Strawberry flavoured soy milk, and veg*n burgers and sausages are a good introduction.

My wife and I have wanted to bring foster children into our home for several years. She and my 2 kids are vegan and I'm a veganish vegetarian. Only vegan foods are in our home...
Hopefully this year when Cola, cost of living interest comes through it'll be as expected a cut and dry case of ending red tape after treasonous fraud. Then, I hope to find some foster kids who actually want to be in a vegan household. I'm still trying to find out what happened to my missing daughter a top valedictorian with great behavior and health. My closest relatives don't live near so it's me and 3 vegan pets in a very low crime neighborhood. I could give kids the option to stay as young adults and save up as they work and study and if it works out make an adoption agreement and otherwise leave the door open for visits and communication. I learned due to foster care fraud an inordinate amount of foster care kids are vegetarian or vegan and the stats on being crime victims post high school are high as many foster care parents just throw the kids out after they graduate. I have 2 nice rooms with an adjoining bathroom. Lost my better half so I suppose it would be best to start with female teens, but of some do stay to work around me, we could try for helping younger children, too. Often the kids loose their parents or their medically kidnapped or scape goats in prison, and plenty leave their kids orphaned so I feel for them as I do have a vegan kitchen and a missing child myself. Information to help me navigate the system are much appreciated.
