Hi<br><br><br><br>
My names Errin. Ive been doing the vegetarian thing since Jan 1st. Basicly scared into it. Im worried im not doing it right. I live on a low buget. So Ive been mainly been eating nothing but salad PB&J, lots of vegggies,and Veggie burgers for a while. I know if you dont do it right you can gain weight so if anyone could kindly guide me in the right direction with some assistance it would be greatly appreciated.<br><br><br><br><br><br>

I'm not sure what you mean by being "scared into going vegetarian"... but you mention you're on a tight budget. Veggieburgers tend to be expensive, although there's no reason you can't have them as your budget allows.<br><br><br><br>
Whole grains and beans are not expensive, especially when you buy them in bulk. What I do is cook quite a bit on weekends and freeze some of it for later. Last night I made 4 loaves of oatmeal/whole wheat bread and froze 2 of them. The thing is, I find dry beans hard to make tasty, although they are healthy and cheap...<br><br><br><br>
Try getting cookbooks out of the local library- that's an inexpensive way to get menu ideas. Or try our recipe forums.<br><br><br><br>
Do you get a variety of vegetables? There's nothing wrong with salad, but it's both healthier and more interesting if you use a variety of vegetables in addition to the usual lettuce-tomato-cucumber combination.

Well, this is enough time to know if you would gain weight. Visited the scale lately? It sounds like with what you're eating now, you'd be more likely to lose some weight. See about getting some nice beans, lentils, and brown rice. They're usually fairly cheap in the bulk sections.

Well the whole scared into being a vegetarian. I saw a local news program on anmials that are killed for meat and the way they are treated before they are actually killed. They then did a follow up and what goes on at meat factories. Needless to say I wanted no more part of that.

VB members probably think I sound like a broken record by now, but I will once again recommend the book "Becoming Vegetarian" by Melina and Davis. It talks about all the nutritional requirements and how veg*ns generally meet them.<br><br><br><br>
As with any diet, you can either gain or lose weight depending on the details of how you implement it. Just watch the scale and pay a little more attention to calories, and you should be ok. Personally, I think I need to cut the soda from my diet, as I've actually gained a couple of pounds since going veg.<br><br><br><br>

you sound like you are doing okay if you are eating lots of veggies<br><br>
some new vegetarians HATE veggies, so they eat none and that's bad lol<br><br>
You should try noodle stir-fries with tofu and stuff, or margarheita pizzas... just realize that anything can be eaten when you are a vegetarian as long as you leave out the meat and stuff and replace it with a vegetarian substitute, or none at all

I greeted you in the other section. Potatoes, brown rice or red rice and beans are cheap. Make sure to eat some fruit. I like to start dinner with a grapefruit then wait a few minutes and have an avocado (not cheap-- look for sales) and 2 organic bananas. They are filling and the avocado is 60% fat but a good fat. lol yeah peanut butter and vegetable burgers!! that's like my total diet in a day!..um I guess you can gain weight if all you eat are carbs( bread, wheat, pasta etc). As far as "doing it right" well that means you can eat anything you want as long as it doesn't contain meat. I can totally relate to your experience that you were "scared into" vegetarian..I gotta admit I was kinda freaked about the treatment of animals.
