Almost found a good tofu recipe...help me get it right!

I have struggled to find a good tofu recipe for ages. I find the taste of tofu very strong (not the flavour, but the sort of tofu-y smell/substance is very strong to me) and have not liked it in stir-fries or main dishes so far (although I can have silken tofu in smoothies). I really want to find some tofu recipes I like because it will open up my protein options a little beyond lentils and tvp


Anyway, I found a recipe in Mark Bittman's 'How to Cook Everything Vegetarian' that involved making a paste out of miso, putting it on the tofu and baking it for an hour. I just finished doing this and feel like I am almost at having tofu that I like. It made a nice crust and smells lovely, but the inside is still very white and distinctly tofu-tasting. Next time, I may try slicing the tofu very thinly first, or perhaps marinating it longer. I was also thinking that perhaps I might like something where the tofu gets baked in a basic way to get it crispy and not having that distinctive tofu smell, but there is some sort of gravy or sauce one can dip it into.

Ideas?

if the tofu was thinner, had been frozen, thawed and pressed (to make it more spongy and soaky-uppy.. yeah, thats a real word :p ), and the marinade was more liquid, it'd probably soak in better.

you could also simmer it in the marinade for a bit, and let it reduce down, i do that sometimes, then i add oil and fry it when it dries up a bit- its incredibly messy, but works for me!

Mmmm... miso tofu. That sounds good
I'd dip it in a little soy sauce maybe. Or because I like a sweet something with miso, maybe a soy sauce/ brown sugar/ agave thing. Hoodedclawjen has great ideas for cooking it.

I usually put it on top of stuff. Usually I make a BBQ baked tofu and put it chopped on top of salads, toasted bread, or whatever. Lemon Pepper tofu is delicious too, as is teriaki (sp? lol) tofu in a stir fry. HTH!

Have you tried smoked tofu? It doesn't taste like tofu at all, and the texture is great. If you chop it up and sauté it with a bit of olive oil it tastes pretty much like bacon. Maybe you should give it a try.

Thanks for the tips, everyone! I tried it again tonight with barbecue sauce, cut the pieces up really thin and tiny, baked for an hour. They got dry and crispy like little chips! I enjoyed them as a side dish with some pasta and broccoli. I think this may be my new snack food

If you have access to an Asian grocery store try looking for pre-fryed tofu. It has a much different texture than regular tofu and in my opinion it's a lot tastier.
