Because people are very strange. I've been completely blown off at vegan event I go to. I've had the checker at the natural food co-op be very friendly to the person in front of me but not even ask me if I'm a member. And I believe it is because of what I look like. So people can compartmental themselves into any thought or action they want. We probably all do to some extent.

I doubt age has much to do with it. I know just as many cynical, closed-minded young people as I do older people. Possibly even more.
Furthermore, the majority of people at protests and rallies for animal rights that I attend are older.

The last individual I know personally who adopted a vegetarian diet to any extent (in his case 'mostly' or 'usually') was 52 at the time he did so, FWIW.
