Aduki bean pie

Suitable for a: vegan diet



100gr aduki beans (soaked in water prior to cooking)

1 kilo (or less) potatoes

5 red bell peppers, 1 of them diced

1 yellow bell pepper, diced

1 onion, diced

1-2 cloves of garlic, chopped

100gr mushrooms, sliced

2-3 carrots, diced

1 bunch of broccoli, finely cut

A few sprigs of fresh parsley

Olive oil




(note:this recipe uses red pepper sauce instead of tomato)



Cook the aduki beans until soft (approximately 1 hour).

Wash and cook the potatoes until soft. Drain the water and mash the potatoes. Add a drizzle of olive oil and salt. Set aside.

Wash 4 of the red bell peppers, cut them in half and clean out the seeds. Spread onto a cookie sheet/aluminium foil and bake in the oven at 180 C for about 10 minutes, or until their skin starts blackening. Remove and allow to cool. Skin them, then cut them in small pieces and put them in a food processor along with the parsley (just the leaves) and a drizzle of olive oil. Process until the mix liquidifies.

Heat up some olive oil in a saucepan in medium heat and fry onion and garlic for 2 minutes. Add carrots and broccoli and keep stirring for another 4 minutes. Then add mushrooms, stir for 1 minute, and add bell peppers. When all the ingredients are soft, add cooked aduki beans, salt and seasonings to taste. Stir for 2 minutes. Take the saucepan off the heat, add the red pepper sauce to it and mix well. Pour mixture into an ovenproof dish (preferrably a deep one), and top with the potato mash. Even surface with a fork. Place in the oven and cook for approximately 45 minutes at 180 C.
