<b>7 Spice Pilaf</b><br><br><br><br>
By: Modified from a friend's recipe...<br><br>
Category: Main Dishes - Rice<br><br>
This recipe is suitable for a: vegetarian/vegan diet.<br><br><br><br><b>Ingredients:<br><br>
-----------------------------------------------------</b><br><br>
1/3 cup chopped onions<br><br>
1 tablespoon olive oil<br><br>
1 cup long grain rice<br><br>
1/2 teaspoon ground cardamom<br><br>
1/2 teaspoon paprika<br><br>
1/4 teaspoon ground coriander<br><br>
1/4 teaspoon ground cinnamon<br><br>
1/4 teaspoon ground cumin<br><br>
1/4 teaspoon pepper<br><br>
1/8 teaspoon ground nutmeg<br><br>
1 (14.5 ounces) can vegetable broth<br><br>
1/4 cup water<br><br>
1 cup chopped fresh spinach<br><br>
1/4 cup golden raisins<br><br>
1/4 cup sliced almonds<br><br><br><br><br><br><b>Instructions:<br><br>

Add oil to a medium saucepan and allow to heat.<br><br>
Add in onion; stir/saute until tender.<br><br>
Add in uncooked rice, and the next 7 ingredients.<br><br>
Cook and stir over medium heat for 5 minutes or until the rice is golden.<br><br>
Add in the vegetable broth and water.<br><br>
Bring to a boil; lower the heat, cover and simmer for 15 minutes.<br><br>
Remove pan from heat and let stand, covered, for 5 minutes or until liquid is absorbed.<br><br>
Stir in chopped spinach, raisins, and almonds; adjust seasoning to taste--salt/pepper, etc --<br><br><br><br><br><br><b>Additional comments:<br><br>

I bring this to a lot of potlucks and dinners where I might not have something to eat otherwise - the spices are unique but it's always a hit with everyone...<br><br><br><br><br><br><br><br>

Umm.. I have a question. What is vegetable broth? I don't think I can buy it here (I'm in Malaysia).<br><br><br><br>
Can anyone teach me how to make it myself? Thanks!

I printed it out but haven't made it yet! I'll have to try it this weekend after reading how well it turned out for those of you who tried it! It sounds so good~

Linda- Sorry you can't find vegetable broth. I found a few brands at a local health food store but I'm not sure if there are health food stores in Malaysia? Anyway if anyone knows how to make homemade veggie broth it would be interesting to know how.

Hi there, yep we have health food stores here (like Nature's Farm for example) but I'm not sure if they sell vegetable broth. I've been in one and saw they have stuff like body building supplements, brewers yeast, and some other dried goods.<br><br><br><br>
I'd like to know, this vegetable broth, what does it look like? Is it in a can, or is it some sorta powder where you have to mix it with water?<br><br><br><br>

Comes as a powder - or you could use veggie stock cubes I would guess...

Ah, thanks for the link. We do have Marigold products sold locally, I'm just not sure if they have this particular powder here but I'll try to find it.<br><br><br><br>

just wondering if you could use jasmine rice...or if the flavor would clash with the spices. i ask, because all i have is jasmine rice right now, and that looks good... :/

I made this tonight for a party of five. It was a resounding successeverybody commented on it. Definitely a keeper.
