I wouldn't try anything on other people, especially non-vegans, that I wasn't familiar with making and thought was really good. A lot of recipes sound good on paper, but don't taste like much. I'd go with what I know.

I like the ideas about the nori rolls and rice paper rolls, and having different types of dipping sauces. It would be easy to create a variety of combos, then people would gravitate towards the flavors they liked.

My personal favorite on nori roll filling is poached tempeh, which is mashed and combined with Sriracha (hot sauce) and Vegenaise (vegan mayonnaise). I also like avocado, red pepper and cucumber for the different textures.
