This recipe is suitable for a: vegetarian/vegan diet.



4 japanese eggplant

10 cloves garlic

4 TB. soy sauce

4 TB. olive oil

rice for 4

sweetener to taste



cook enough rice for 4 people.

while it is cooking parboil the japanese eggplants (the long skinny ones) until soft. take the garlic and chop or slice it. add oil to garlic and saute a few minutes being careful not to burn it. when it is soft add the soy sauce all at once and, if you like, sweeten to taste. serve eggplant, split lenthwise, on rice with sauce over it.

i got this recipe from my former Chinese Medicine instructor. it is SO simple and good, keeps really well for easy leftovers or lunch the next day. i always make more than we need.
