That's been the basic problem. Once opened, the guac tends to turn brown within 24-hours. Anyway, I tried it, and apparently you CAN freeze guacamole for use later. After about a week in my freezer, I thawed a portion of it, and it was actually pretty good. Still green and tasty. Thanks for the replies.

|etherea||Never tried to freeze but agree with Tom in that it would probably be edible. I do find though that avocado has a tendency to discolour easily.|

|Tom||I'm pretty sure freezing portions of it and then thawing them later would not make the guac unhealthy to eat, so long as it was kept frozen in the meantime. I don't know what the texture would be like after it thawed out, though.|

Can you freeze guacamole?
I bought a tub of the stuff at the market, but once it's opened, it will spoil quickly. Can I freeze part of it, then thaw it out for later?
