Pulse dates/raisins and nuts and a little salt together in a food processor, then press into the molds and freeze. They should easily pop out once frozen, then they'll thaw in a few hours for lunch.

could you bake falafels in them?
I can think of things with muffin tins but nothing for special shapes.

Hmm, could you use them for sticky rice 'sushi' where you press the rice with a filling inside, rather than roll and slice it?
Also you can make eggless muffins with chickpea flour batter.

Silicone Mould lunch ideas?
I have a bunch of cute silicone moulds, from icecube size to cupcake size, and I'm struggling to think of vegetarian/vegan (I have to go off dairy and soya sometimes) recipies I can use them for. It's mostly so I can pack adorable lunches, but so far only chocolate and cupcakes have been sucessful, and those aren't very smart lunch ideas. I tried fruit jelly using a pack of vege gel, but it didn't make thick enough jelly to survive the lunchbox and I can't find agar agar locally.
Does anyone have any ideas? I have a month to experiment with it, but I can't even imagine where to start. It would need to be smoothe and mousse-y enough to fill the mould, but set firmly enough to lest the day. I can bake in them too, but I just can't think what would work other than cupcakes.
