The Vegan Junction Quinoa and sweet potato make an excellent combo!

Thanks for this! I was at a conference this weekend, and my adult son made this and had it all ready when i arrived home ravenous.

It was delicious, and he said easy as pie to make.

Edit, son said he didn't grate the sweet potatoes, just sliced them.
