vegandaydream This looks awesome!!!! I have been totally getting into peppers lately and I love the idea of adding some sweet peppers to this soup!! So glad that you enjoyed the idea, and really nice to see your own take on it! I love playing around with recipes so much, it is what makes cooking so much fun!!

Naturebound Well, I finally got around to making Sweet Potato Chickpea soup today! I lost the recipe to this thread and didn't have time to get on the computer so I made it slightly differently but still incredibly good! For mine, I added chickpeas, sweet potato, diced tomato, orange bell pepper, carrots, onion, minced fresh garlic, and spices like cumin, chili powder, cinnamon, and ginger. I ate it while it was steaming hot after coming in from the cold and this has to be one of the best soups I have ever had!!! I absolutely LOVE homemade soups and have been going crazy with them lately...split pea soup, cream of mushroom/wild rice soup, red lentil/cabbage/sauerkraut/tomato soup, and this one all within the last month or so. I love the slight sweetness and tenderness of this soup though. Here is a pic of mine:

Recipes that are vegan, quick to prepare, not too long an ingredient list are ones I tend to use the most. That soup looks delish!

vegandaydream Thanks for the positive feedback! We are just getting our site starting off and have lots more on the way. Two weeks until the harvest is done and then we can really get things going. Any suggestions of what kind of recipes people are most interested in seeing would be appreciated!
