Anyone who has a Roku box, a big chunk of the content on the Indian Cooking channel is  video from Manjula's Kitchen. Watching it on the web is easier, but watching it on TV is fun.

It's not an actual cook book, but this website has the most comprehensive collection of veg Indian recipes.

ShadowKat Dave, that was like magic! I clicked the link on my iPad, and then "purchased" and then turned my kindle on and turned on wifi and I got it! Damn magic!

In ref to the op, there are ways of stir frying stuff using a small amount of water instead of oil. Maybe someone else can elucidate on ow that is done.

WOW -- thanks so much, Dave!  Just used your link and got it.  And thanks also to you, LadyJane1, for the first recommendation. :-)  When you posted about it, I'd put the book in my "cart" but hadn't gotten around to doing more than that.  Since I have a Kindle account (though now I read using the K-App on my iPad), I was able to take advantage of that free offer.  Cool!  Meanwhile, as I generally prefer cookbooks with nutritional information, I also splurged on a second book that looked good and included it - The Indian Vegan Kitchen by Madhu Gadia.  Guess my only challenge will be to buy the spices I'll need, but I'm thinking that I don't have to start right in cooking dozens of dishes at once!
