sallyomally WOW! I had no idea!I gave most of the dried up looking corn to the birds, but I still have some left. This would be fun to try. Thanks, Tom.

Tom Sally, I don't know how ripe your corn is, but sometimes I've grown my own sweet corn and been a bit too late harvesting it. I have a hot air corn popper, and I've made parched sweet corn in it. I use corn that's quite over-ripe and is starting to dry a bit. I rub the kernels off the cob (they should be dry enough that they don't squirt juice all over) and pop it. They don't puff up very much or make loud popping noises- just soft pops. They puff up a little bit and when the pops slow down you've got a slightly crunchy, faintly sweet treat, a bit like corn puffs maybe.

GingerFoxx I have been using watermelon in smoothies a lot. You whiz it around in the blender for a few seconds and it more or less instantly turns to juice. A great refreshing summer beverage.

Oh yay! They're such thing at faux feta? I guess it can somehow be recreated using tofu (i would imagine). It does have somewhat similar texture? But yeah, glad I could help, hopefully it's yummy.

As a matter of fact, there is. I would never have thought of putting those two together. I used to eat feta on bread with cantaloupe so I bet it would be very good with watermelon. The sweetness with the tangy taste sounds delicious. Thanks!

watermelon and feta cheese is heaven, it used to be one of my favs, so if there is some kind of comparable substitute for the feta..which i don't beleive there is...well this was pointless..haha.

VegRN I am getting really into canning right now, so I think I would can some corn relish. The Blue book from Ball has a recipe for it, but I am not sure if you need a pressure canner or just a boiling water one.

danakscully64 I think that's why Jiffy is so cheap, it's made with a by-product. Yuck. There are a lot of other cornbread mixes on the market that are safe. I make mine at home using this recipe (I veganize it):

HomeGurlCanCook I haven't eaten anything "Jiffy related" since I was a kid but I had no idea that Jiffy contains lard...it's kinda scary if you think about it since Jiffy comes in powdered form!

I've never asked for the recipe from my mom but the one you posted seems like it would be the same except with fresh corn. Maybe I'll have to set myself to trying create a new version. I'll post here...assuming I'm successful!

Sadly, Jiffy contains lard, so it's not vegetarian Corn bread is awesome though.

danakscully64 I like to grill it and add it to salad. I just made this for the first time, it was SOOOO good. And you could use vegan sour cream and vegan cheese in place of the dairy:

Creamed corn is good to use instead of sour cream in mexican dishes.

HomeGurlCanCook One of my favorite things to do with fresh corn is to cut the kernels of the ear and sauté it in olive oil it with diced red or green bell peppers (or both), onion and garlic. If I want a little heat I'll chop up all or part of a jalepeno to toss in as well. These ingredients freeze well so you can chop them up and freeze them raw so when you're ready to cook, you just need to put them in a hot pan with the oil.



My mom used to make a great corn bread casserole with Jiffy cornbread mix and fresh corn (not sure if you're vegan but if you are, I'm sure there's a way to adjust it.



For the watermelon...I love to grill it really quickly on a super hot grill and serve it with pickled onions and arugula and a little bit of balsamic vinegar sprinkled on top. If you're not vegan, goat cheese goes really well with watermelon and arugula.
