I like something called 'sloppy lentils'...basically cooked lentils in barbeque sauce with some finely chopped tomatoes and onions.
Mashed black beans mixed up with salsa, maybe some veggies on top is good too.

I made a new spread last night that I am really enjoying that I call Italian Tempeh Spread.
1 can canelli beans (though next time I make them I have some bulk great northerns I will use)
1 8 ounce package of tempeh
Toffuti Better Than Cream Cheese
A vegan cheese spread/vegan cheese slices
I heated olive oil in a fry pan and grated the tempeh, and it crumbled right up. I put it in with the heated olive oil and sprinkled it with Italian seasoning. I cooked it until it was turning slightly brown.
I drained the canned beans, and then put them in a mixing bowl. I mashed them with a fork and stirred in the tempeh. I stirred the mashed beans and tempeh together then added a few spoonfuls of veganaise until it would make the desired consistency I wanted.
I purchased a three pack of Italian seasonings from Target: classic Italian seasoning, Sicilian-inspired pizza seasoning, and Tuscan-inspired herb seasoning. I added a teaspoon of each to the mixture, and mixed it all up.
I spread Toffuti Better Than Cream Cheese on one slice of bread, pizza sauce on another slice of bread, my Italian Tempeh Spread, and I put a couple slices of Toffuti cheese slices on the pizza sauce side and put a layer of alfalfa sprouts on there as well. I put the sandwich open in my toaster oven and toasted it up for about 5 minutes, until the bread was golden brown.
IT WAS DELICIOUS! This is my NEW favorite sandwich!
I plan on making some cashew cheese spread tonight to use in place of the cheese slices.

My favourite spreads to put on a sandwich (and then fill it with lots of yummy salad) are:
- store-bought beetroot and horseradish dip
- Vegemite - good with just tomato and lettuce! and sometimes avocado too
- roasted garlic - roast a whole bulb with olive oil, then squeeze out the insides, spread it on bread! yummy

|cecmar351||I definitely would try hummus, and you can make or buy many different flavors too. Try baking seitan for a change, Fat Free Vegan has two really good recipes. Also try adding fresh homemade salsa to sandwiches. And nut butter sandwiches with jelly, bananas or even applesauce is really good. Also try switching up your breads- pitas, tortillas and mini bagels are a good way to mix things up.|

|codemonkey||I made a white bean spread to go in a wrap for my lunch today. I put a can of navy beans (drained and rinsed), 2 tbsp lime juice, a big scoop of minced garlic, 2 tbsp miso paste, pepper and mrs. dash in the food processor and whizzed it up. Then I spread some on a tortilla and wrapped it up with some bean sprouts, sliced up bell pepper and some lettuce.|

|Mojo||I like mock tuna salad, falafel patties, Soy Bit-Lettuce-Tomato-Veganaise. Hummus is very versatile. Once you create the basic recipe, you can flavor it with all sorts of different things. My favorite is sun dried tomatoes. Artichokes are also very good.|

Thanks for all the suggestions, this is my first time on this forum and I'm really impressed with the response. I'll try some variations on the hummus ideas, though she makes her sandwiches early in the morning for lunchtime so it would need to be quite a dry mix, but maybe with some roast peppers.
Kiz, although my wife doesn't mind marmite in gravy or fried veg, there's no chance of her having it in sandwiches. When I used to go out to work I enjoyed cold toast with marmite.
So I'll try out your tips and report back if I have any success.

Avacado is the best sandwich spread ever - I love avacado, tomato, canned beetroot, spinach, pickled chilli, cucumber and grated vegan cheese grilled sandwiches/wraps.
For something a little different - mashed cooked sweet potato/yam mixed in with tofutti cream cheese (or normal cream cheese if you eat that) with some salt/pepper might make an interesting spread.

If you make your own bread, a good spread and some veggies (grilled, raw, or whatever) can be such an amazing lunch.
Try some pesto, or olive tapenade, or roasted red peppers all chopped up. Mm!

If I'm feeling very hungry (or hungover ) I have a bean burger, nut cutlet or linda mccartney sausage sandwich with tomato and mustard. So good.
I like avocado and tomato, or guacamole with salad. Hummus with grated carrot and lettuce. Or simply just salad with mustard (everyone says this is weird) or salad with lots of pickles.
I don't have sandwiches too much, I like to have pitta, falafel and dips a lot. Or sushi if I have the time.

Lately I've been making chickpea salad sandwiches, but for the chickpea salad I don't use any veggies in the mix. I actually use 7 grain rice (which I buy in bulk) and lentils to mash up with the chickpeas and then I mix in veganaise until I get a decent mixture that I like and I add nutritional yeast, onion powder, garlic powder, and tumeric. Pretty darn tasty in of itself, if I may say so.
For sandwiches, I use that, guacamole, and sprouts. I will use a "cheese" spread made from cashews or Tofutti Better Than Cream Cheese if I am in the mood for it as well.
I've been eating those daily now for about a month. I am not getting tired of them yet.

See, I think Tartex is nasty, but if you Google "vegan pate", you'll find a bunch of recipes for things that are similar.
If she likes hummus, you can spread that on some bread with various raw veggies/lettuce or even some grilled veg. I used to put refried beans in between bread and fry it gently too (haven't done it in awhile). There is a chickpea/mock tunafish salad that is one of VB's faves too..you can find it in the recipe section.

I work from home so I have a good variety of food for lunch, but my wife works at the local hospital and takes sandwiches. We bake our own bread so that's really tasty but she gets a bit bored with the fillings, usually cheese and tomato or salad, and occasionally egg. Does anyone have any recipes for sandwich spreads? I used to make one with lentils years ago and it was passable, but I'd like to try something different, maybe on the lines of Tartex.
I'd be grateful for any ideas.
