bp & crew came over somewhere between 1:30 and 2, and everyone else showed up some time between 2 and 3. I think the last folk left around 8 pm. There was still food for eating and good company and conversations, so we just kept hanging about ![]() |

omg thanksgiving potluck sounds freakin awesome. Pie!! I LOVE pie. I make a kick ass mincemeat pie (sans the meat of course). Those cookies are delic with pumpkin in them too. We could have a tofurkey and everything. I'm so excited and it's not even autumn. |

It was so nice to meet everyone. I had a great time. You were all so nice and definetly some cool ass people! The food was delicious. RC-Those ice cream sandwiches were unbelievable! you really don't taste the olive, but it adds the necessary fat and moisture needed with a good soft chewy texture. I prefer it over any margarine spread really. You can't do all olive oil or it tastes salady ![]() It's actually quite good to do 1/2 olive oil and 1/2 margarine/earth balance in a sugar cookie. Rolls and cuts like a charm, I get nothing but praise about my sugar cookies. |

I'm glad everyone had a great time. Sorry I didn't make it. Next time, if you're short of desserts again, I'll try my hand at vegan baklava. Nykoelle, olive oil in a sweet cookie might be interesting. I wouldn't have thought to try that. |

r_c and baypuppy did. I didn't. And Megan, I tried varying that with coconut extract, flaked coconut instead of the oats, and pieces of dried pineapple and it was a wreck and pretty bad. most other varieties work. That one was a big, big flop. Just as a heads up ![]() |

Here's the usual recipe. I screwed up in that I completely FORGOT the brown sugar, and saved some of them by adding extra maple syrup. I've got this pretty perfect if I remember to add everything ![]() 1c whole wheat flour 1c + 3 tbsp unbleached all purpose flour pinch salt 1tsp baking powder 1tsp baking soda 1tsp cinnamon 1/2 c raw sugar 1/4 - 1/2 c maple syrup 1 c packed dark brown sugar 2 tsp vanilla 1/2 c earth balance shortening 1/2 c extra virgin olive oil 6 tbsp unsweetened apple sauce 1/4 c rice/soy milk mix the wet, add in the dry until like, just mixed. Then fold in: 2 c quick cooking oats (not instant) 1 1/4 c _____ (craisins I used, raisins or chocolate chips are cool too) The sugar, you need at least 3/4 c of a sweetener aside from the brown sugar imo. cooking style is important. move the oven rack to the top (don't use the bottom one, it takes a while) and put it to 400. Bake approximately 11 minutes, just watch till they're browned. The goal is to get them firm on the outside but chewy on the inside. The high temperature does that, but you have to watch them. I make them big, so it will probably be less time even if you make them smaller. I vary it in the fall by subbing in canned pumpkin for the apple sauce and adding 2tsp pumpkin pie spice instead of cinnamon, and make them with cranberries or something autumny and dried. Molasses works instead of the maple syrup in that well. |

your cupcakes didn't make it home with me. My boyfriend ate them all in the car. Think he mumbled something about blueberries being good as he started his 3rd ![]() Potluck was good. Next time I'm not going to go ride before hand, I was still hurting from the heat. Bri's not talkative but he thought everyone was interesting and the food was good. I enjoyed myself greatly. I screwed up most of the cookies. They're dry. The other half of them are delicious though, so hopefully that'll make up for it. The slaw is delicious too. So I'm 1.5/2 heh. I'm going to get chips too, it's impossible to screw chips up THAT badly :-) |

whew...okay...so I'm *working* on getting there tomorrow!! (*i got your email RC, thanks ![]() Hopefully my legs and blood pressure will be working well enough to come... in the meantime, i am making food anyway.... I have Cashew Sesame Noodles and Panzanella salad ( i will leave the pinenuts on the side, so that the nut-alleregic can eat it). Since there may be lacking in desserts (heehee)...i might be able to whip up some cookies or a quick cake. It depends on my energy tonight though! Im soooo excited! |
