Tofu-N-Sprouts The recipe my daughter "made-up" for vegan Choc. chip cookies is very similar. We've used it for years now. I think they copied us.



Oh wait, except we didn't use the cocoa, and we use already-ground flax meal...OK, never mind, totally different recipe.

Tofu-N-Sprouts ^^^My family complains that I over-spice everything (even though my kids ADD Tabasco to everything after I'm done seasoning it) It's all a matter of taste.

You know what's funny... my dad likes my cooking but always complains that it's' too bland and adds hot sauce, which is fine with me because I like it the way it is and that way we're both happy. My BF and his family, however, really like my cooking exactly how it is. My BF's mom always raves about how wonderful I season everything and how I use so many herbs/spices. In his family, his mom NEVER used ANY herbs/spices/garlic/flavor so my food in comparison is crazy seasoned.

Lucious I made these at new years.

In one day, my family managed to eat all 42 that I made!



So I made more for my friends, and they DEVOURED them. They couldn't believe they were vegan.



By far a huge hit!

They were so good I may have had a couple before breakfast lol

nookle YES! I made these before, and they were fantastic - I gave some to my neighbors who think we live on beans and twigs. My neighbors - one who is doing her medical residency, for christ's sake, and STILL asked me if I find it difficult to properly combine proteins in each meal... They were very impressed with the cookies.

GhostUser I've never eaten vegan cookies before. Mostly because I found a recipe for cookies on a bodybuilding site that also happened to be vegan, made them, and they were disgusting.



I've been craving some chocolate chip cookies. I found this recipe and they were GREAT! I made the regular version, but instead of 2 teaspoons of vanilla...I did one and a half vanilla and half teaspoon almond. They are SO GOOD. Also, this is easy to make even without any fancy equipment. All I did was use a cheapo coffee grinder to grind up the flax seed. But if you have something like Ener-G egg replacer you can use that instead of the flax+soymilk mixture.

"Equipment:

Baking Sheet, Blender, 2 large bowls, mixing spatula, cookie sheets



Ingredients

3/4 cup canola oil

2 cups sugar

2 teaspoons vanilla



1 tablespoon + 1 teaspoon whole flax seeds

1/2 cup soymilk



2 cups all purp flour

3/4 cup dutch processed cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chocolate chips





Directions

Preheat oven to 350 F.



Grind the flax seeds on high in a blender until they become a powder. Add soymilk and blend for another 30 seconds or so. Set aside.



In a large bowl sift together flour, cocoa, baking soda and salt.



In a seperate large bowl cream together oil and sugar. Add the flax seed/soy milk mixture and mix well. Add the vanilla.



Fold in the dry ingredients in batches. When it starts to get too stiff to mix with a spatula, use your hands until a nice stiff dough forms. Add the chocolate chips and mix with your hands again.



Roll dough into 1 inch balls and flatten into a disc that's about 1 1/2 inches in diameter. Place on an ungreased cookie sheet about an inch apart.



Bake for 10 minutes. Remove from oven and let cool for about 5 minutes, then set them on a wire rack to cool completely.



Variations:

For chocolate chocolate chip cherry cookies, replace 1 teaspoon of the vanilla with almond extract, and replace 1/2 the chocolate chips with dried cherries.



For chocolate nut cookies, replace 1 teaspoon of the vanilla with a nut extract (almond, walnut, what have you) and replace the chocolate chips with 1 1/2 cups chopped nuts (hazelnuts, almonds or walnuts all are good)."
