Libellula | you want to rinse and sort through dried beans/peas before cooking them to remove any icksters or rocks that could get in them, and then cook them yourself to make them soft and yummy. canned have more sodium in them, as rabid pointed out. |

Dried beans need to be cooked to rehydrate them so that they are edable. They are cheaper than canned, but also more time consuming. Peas I prefer frozen anyway. If you use canned beans, just rinse them first to reduce the sodium. I think what they mean is to eat legume type beans rather than string beans or other more "vegetable type" beans. |
