raggydoo Good idea! I'm sure they'll let you use their microwave! I just thought of one more thing you could bring in your cooler: cold taco salad!

lightrailcoyote thanks for the responses! raggydoo, we aren't staying at any hotels along the way, we're just winging it and driving through, taking turns...maybe stopping at some sightseeing places. I guess I could always sneak my food into a truck stop and microwave it. anyway, in my Vegan Planet I found a recipe for a GREAT sandwich that should make a few meals for me, hopefully it will help!



keep the suggestions coming...I love food!

If you're worried about not having something to heat things up with, most hotels have a microwave in their breakfast area and they will let you use it. So canned soups, dried soups, and Fantastic Foods Ready Meals don't have to be refrigetared and are a great quick fix on the road.



To keep in your cooler, you can make your own subs with veggie deli slices or just veggies, juice, soy milk, pudding, peanut butter sandwiches, fruit.



For quick snacks, granola bars, cookies, potato chips, Luna bars, bagels.

I am going on a road trip to Big Sur, CA with my best friend (omni) in a few weeks. we're staying in a hostel with a kitchen, so I should be okay while we are there, but finding something along the road is an issue. I would rather not have to say "veggie works burrito with no cheese or sour cream" more than once on this trip.



does anyone have any good recipes for food that I can prepare beforehand that will keep well in a cooler and I won't have to reheat so I can have some real meals on the road?
