This recipe is suitable for a: vegetarian diet.



Ingredients:

1 egg white



2 heaping tbsp. prune puree



3 heaping tbsp. applesauce



1/2 tsp. vanilla



1/4 tsp. cinnamon



about 1/2 cup mint chips



3/4 cup whole wheat flour



1/4 cup cocoa powder



1 tsp. baking soda



1/3 tsp. baking powder



1/3 tsp. salt



1/2 cup sugar





Instructions:

Preheat oven to 350 degrees F.



Mix the wet ingredients with stick belnder until frothy.



Mix dry ingredients together in a large bowl.



Add the wet ingredients to dry, fold in with spatula.



Spray hands with cooking spray, roll into about 6 cookies.



Spray hands before making each cookie.



Cook 8-12 minutes, remove carefully from pan.



Cool on cookie cooling rack.



Store in tupperware, place waxed paper between coookies.
