I was a cheese addict too, but the vegan cheeses that are in stores now are helping me a lot. I like Daiya for pizza and casseroles, and Rice Vegan slices for sandwiches. I also like the taste of Teese. I want to try it on a pizza soon. Wayfare's Mexi Cheddar Dip is great with chips. I haven't tried making my own vegan mac and cheese yet, but I like the Amy's one with Daiya.

If you have an Asian market nearby, get some agar powder or flakes and make some cashew cheese (it melts).
If you have an Indian market nearby, get some black salt and add that to your tofu scramble.
P.S. While some vegans do not like the taste of animal products, our reasons for becoming vegan (assuming a true vegan in lifestyle) are ethical, so we are right here with you in liking the taste of some animal products, but we choose not to eat them anyway.

I'm debating on taking this challenge for the month of March. The only things I can see myself possibly struggling with on this challenge are cheese (I'm from WI. I love cheese) although I don't it it very often even now because it makes me very congested. Also, eggs. I don't eat yolks, but I do like a good egg white scramble now and then.
Advice? Encouragement? Recipes? Anything?
P.S. I'm also on a tight budget, in case that contributes.
