Black Bean Burgers Category: Sandwiches/Burgers This recipe is suitable for a: vegetarian diet Preparation Time: 30-40 minutes Serves: 8 Ingredients: ----------------------------------------------------- 3 (15 ounce) cans of black beans, rinsed and drained 1 3/4 cups diced onion 1 1/2 cups uncooked regular oats 3/4 cup chopped fresh cilantro 2 tablespoons seeded minced jalapeno pepper 3/4 teaspoon salt 2 large eggs, lightly beaten 1/4 cup all-purpose flouor 1/4 cup yellow cornmeal (not self-rising or cornmeal mix) 1 tablespoon vegetable oil, divided 8 lettuce leaves 8 sandwich rolls/burger buns 1/2 cup salsa Instructions: ----------------------------------------------------- 1. Place beans in a large bowl; coarsely mash with a fork. Add onion and next 5 ingredients; stir well. Shape mixture into 8 patties. Combine flour and cornmeal in a pie plate or shallow dish; stir well, and dredge patties in mixture. 2. Heat 1 1/2 teaspoons oil in a large skillet over medium-high heat. Cook patties 5 minutes on each side or until lightly browned. Remove patties from skillet; set aside and keep warm. Repeat procedure with remaining patties. Additional comments: ----------------------------------------------------- The book I have suggests serving these on the roll with lettuce and salsa.
