Awesome, thanks! I may have to try them, then. The bakery in the town I grew up in makes these incredible chewy gingerbread cookies with chocolate frosting buttons/faces. I'm sure I can come up with a frosting that's similar, so I'll have to try it with these cookies.

For those of you who've made these, are they chewy or crunchy? I love chewy gingerbread cookies and I haven't found a recipe that's quite right (and vegan) yet.

Julia.G I am quite happy with how my cookies turned out. My grandma, Sis and mom all enjoyed the taste of the cookies. They saw no difference between my vegan cookies and the usual non vegan ones I make every year. . My icing did not do so well though.

ChemistRachel as far as i can tell, the gingerbread cookies in the betty crocker cookbook are vegan with vegetable shortening (just the cookies, not the frosting). these are the ones my mom always made. i now make them for the holidays - it is good because you can slightly under bake them for soft cookies or slightly over bake them for crispy cookies.

I doubt they'll be horrible...(translated, hope they won't be) lol

Ditto. Im baking my cookies in the morning to. And too afraid.. that there not like going to be the picture. Or my worst fear that I made them wrong, or made them horrible ..

I have my dough chillin' in the fridge...I'm a little concerned they won't be like the ones pictured. MY dough is a LOT darker than these. But we will see...I'll be baking them in the morning....

shannon1976 Here is the recipe that I use, and my co-workers all loved them http://www.recipezaar.com/Mimis-Gingerbread-Men-211637 read my notes to the side, I used 1/4 cup applesauce instead of the egg and the frosting I used is also in that review.

Julia.G I want to make vegan gingerbread cookies for the first time ever. I make non vegan gingerbread cookies every year, but I get the already made roll out the dough roll out with rolling pin thing. Bad explanation. I know there are tons of recipes online. But I want a recipe you guys recommend. Since I will be making these not only for me but for my grandma as his present like I do every year. Thanks.
