I've tried at least a dozen mock cheese products over the last decade or so and had, by last year, given up on finding one I could stomach. Since going vegan, I've resigned myself to zero cheese, which is okay.
My boyfriend picked some of this up after going vegan and he talked me into putting it into some sweet potato and black bean burritos I made, and it was actually decent. I only used a little, because I was hyper nervous about it, but it did melt - WAY more than most mock cheeses I've tried and while it did not taste exactly like cheese, it did sort of taste like cheddar without any weird mock cheese flavor or texture.
It's still not like real cheese and I doubt I'd go so far as to use it as a featured item - say like in a grilled cheese, but I would use this again in a burrito or some sort of dish where just a little cheese is required.
My boyfriend thinks it's the best stuff ever though. I'm sure he'd give it a full 5 stars. Oddly, we have a vegetarian in our house and she likes the shreds but hated this stuff, which I can't figure out, but I guess everyone is different.
