Well the places that I usually go are: Macy's - they have a HUGE salad bar in the skyroom (12th floor) that you can get the biggest salad you want (or go back for seconds) for $9. Otherwise the Market Place at Macy's (in the basement) has a salad counter with some fancy (and delicious) toppings such as marinated portobello caps, grilled asparagus, grilled cauliflower w/onions etc that is awesome, just a little pricey and they charge by the pound so I don't get as big of a salad when I go there.
Then there is La Loma which is on the street level of the Northstar building. It's kind of tucked back in a hallway near the convenience store there but they have vegetarian Tamales and their beans are vegetarian as well (and their guac/salsa/chips)
There is a Thai place on the skyway level of the Northstar building, just down the short stairs from Zen Box, but their steamed veggies have butter in them so I won't be going there anymore
There is a few options for Indian - Bombay Express which has about 5-6 veg options each day and it's in the back of the 1st floor of Macy's - then there's Bombay Bistro South Indian that is in the Midwest Plaza and it's all vegetarian but it's sit down... and there is also another indian place in the Gaviidae Common that I would imagine has veg options.
Oh and D'Amico & Son's on Nicollette Mall (street level) usually has 3-4 deli type salads to choose from that are veg friendly as well.
That is all I can think of for now but those are the places I eat most often
