The "Sofritas" will be braised with chiles and spices and available at the chain’s 83 Chicagoland locations.
Currently, the only option for vegetarians is getting black beans or fajita vegetables as the base of their meals instead of meat. Chipotle's pinto beans are made with pork, although the company said recently it will soon remove the meat to give vegetarians another option.
Chipotle didn’t say how long the tofu test would last. The decision on whether to add tofu to the menu permanently will depend on its performance in the region.
