Can anyone tell me about parkin? (I'm from the US.) I hear it's similar to gingerbread, but made with oatmeal. I want to try making it and I have a couple of questions. When the recipe calls for oatmeal, does that mean rolled oats, or is the oatmeal ground into a powder? And do most people prefer it with a combination of oatmeal and wheat flour, or just all oatmeal?
