This is my foolproof seitan recipe (I do tweak the recipe a bit to change the flavors).
I like it because it doesn't involve boiling (it is steamed). I didn't care much for the homemade boiled seitan I made. Blech!
ETA: This recipe is actually very easy to make. The hardest part is finding all of the ingredients. I still haven't found the chicken seasoning but I use my own 'chicken' bouillon cubes (I just dissolve them in the water).
