Hi there, I'm not a vegan, but I am a vegetarian and this weekend is my baby cousin's 2nd birthday. She is lactose intollorant and allergic to every food under the sun (basically) and so for the potluck dinner we're having for her birthday I was planning on making a vegan dish (so that a) she can eat it and b) I can eat it).

If you know of any good vegan recipes that a 2 year old will enjoy, as well as myself and other family members, please do help me out!!

Don't all kids love noodles? Maybe a pasta salad or one with a simple tomato sauce. Use a cute pasta shape like letters or bowties. That would be a hit with the 2 year old.

Beans are a good option too, as most kids love those. You could make a baked bean dish-- sweet and spicy all in the same pot. Yum! I make a corn & black bean salsa that my daughter (she 2 also) loves, and is always a hit with the adults too. The recipe is on my website: Easy to make and it can be done way ahead of time. Serve with some tortilla chips. Couldn't be easier.

Fruit skewers is also a cute idea. Would be somewhat time consuming to cut all the fruit and skewer it, but the kids would like it. You could make a dipping sauce out of vegan sour cream, a little lemon zest & juice, some vanilla and powdered sugar (I have an exact recipe up on my website for that too, if interested).

Umm.... How about a faux pizza? Like make a focaccia with lots of pizza toppings (black olives, mushrooms, etc), minus the cheese. That would be easy since you could get pre-made dough at the store.

That's all I can come up with at the moment.

Yeah, ^^^ what she said. My kids are long past 2, but I have a ton of ideas... if I knew what we're working with here.
