Don't all kids love noodles? Maybe a pasta salad or one with a simple tomato sauce. Use a cute pasta shape like letters or bowties. That would be a hit with the 2 year old.
Beans are a good option too, as most kids love those. You could make a baked bean dish-- sweet and spicy all in the same pot. Yum! I make a corn & black bean salsa that my daughter (she 2 also) loves, and is always a hit with the adults too. The recipe is on my website: www.missionvegan.com

Fruit skewers is also a cute idea. Would be somewhat time consuming to cut all the fruit and skewer it, but the kids would like it. You could make a dipping sauce out of vegan sour cream, a little lemon zest & juice, some vanilla and powdered sugar (I have an exact recipe up on my website for that too, if interested).
Umm.... How about a faux pizza? Like make a focaccia with lots of pizza toppings (black olives, mushrooms, etc), minus the cheese. That would be easy since you could get pre-made dough at the store.
