Yesterday:

B - Smoothie (blueberries, raspberries, protein powder, almond milk)

S - Sandwich ('beef' slices with avocado and hot sauce)

L - Butter beans with garlicky sweet potato

D - Tempeh piccata with mashed carrot, sweet potato and swede

 

Today:

B - Toast with peanut butter and marmalade, almond milk

S - Protein flapjack

S - Muffin with peanut butter and marmite

L - Leftover piccata and mash

S - Almonds

D - Stir fry with soy pieces and noodles

Everyone is so creative! So many ideas...thanks! So far today:
Green drink and homemade almond/walnut butter wrapped in dehydrated banana fruit leathers. I've been low on potassium so I thought that would help.

Almond and walnut butter? I've never heard of that before! Neither have I heard of banana fruit leather! Do you have a recipe for that?

Breakfast: Raw protein powder, kale, pomegranate concentrate, and a scoop of green powder.

Also some water to add volume.

 

 

Lunch: I had a big salad with beans, quinoa, and steamed veggies.

 

It was filling.

 

Dinner: Grilled veggies, brown rice, and a bowl of fruit with a vegan dessert 

dressing I made.

I had butternut sqaush,lentil and apple stew from Chloe Cosarelli's book.Its a curry and its amazing with flat bread.

Super simple! Throw some walnuts and almonds in the food processor and let it blend until the walnuts are mealy. Add 2 or 3 teaspoons of olive oil and continue blending until it has nut butter consistency. You will need to scrape the sides sometimes.
Banana fruit leather: take super ripe bananas and blend in blender without liquid until it's smooth. I added a lemon slice with the rind but not necessary. Spread out thin on a dehydrator sheet and dehydrate for 14 to 20 hours or so. You just have to keep checking. Next time I'm doing half blueberries and half bananas. Store by rolling in wax paper and refrigerate. I did mine at 115 degrees. Have fun!

I'm basically out of food. I'm taking my protein powder and green powder to Juice It Up and have them make me an Acai smoothie. Then off to trader Joe's! Happy and blessed Sunday to you.

Dinner: marinated tofu sautéed with thai veggies in hosin/tamari/ginger/sesame oil sauce with a handful of udon noodles. coconut rice pudding  and fruit salad for dessert.

Evening snack: veggies with baba ganoush dip

This is an amazing raw pudding - super healthy! I can eat the whole batch in one sitting but that's over 800 calories...woops!

I get it at Wholefoods, it's Tempeh smoky maple bacon flavored.

I'm not too sure but I think I've seen it also at Safeway, where they keep the Tofurky and tofu stuff :)

B+L: vegan buttered toast with sliced banana sprinkled with chia seed. Cranberries and pomegranate juice. dried prunes

D: Black bean/mushrooms and quinoa stuffed peppers (from Vegan with a Vengeance p:83 extremely delicious!) and pear cobbler with soy milk

I enjoyed a gluten free granola (Kind) with almond milk, blueberries, bananas with some Optimum Power Blueberry Cinnamon cereal. My mouth feels gross now and I can't stop thinking about my green smoothie. So that will be my next meal and can't wait to do something extra good for my body. I think the aftertaste is mainly from the blueberry cereal as it wasn't gluten free.

 

Need water!

 

Later today I will make a big salad with argula, red bell pepper, avacado, orange segments, raisins plus some kind of protein (tofu or chicken-less strips).

 

Gearing more towards raw...

S - 2 bourbons, homemade raw fruit and nut cookie, banana

L - Roast veg and tofutti cream cheese sandwich

S - Berry Trek bar, popcorn

D - Extra hot veg and soy chilli with rice, avocado and lots of fresh coriander

B: banana (was not hungry much)

L: flax bread sandwich with avocado, grilled portobello mushroom, grilled red peppers, tomatoes and homemade lemon vegenaise

D: beets/carrot/orange soup with pan fried tofu and corn patties

 

The dinner was a total hit with my son (I loved it also). The red soup is an explosion of flavour in the mouth on different layers and the corn fried patties were simple to make and delicious with a crispy outside, soft inside. Both are keepers on my monthly menu.

Just made some of my world famous broccoli sauce for some potatoes. (Ok, maybe not world famous ;) )

 

For those interested:

 

1 cup finely chopped broccoli

6 tbs earth balance margarine

1 tbs chopped garlic

2 tbs nutritional yeast

1 tbs horse radish (optional)

salt, pepper and italian seasoning to flavour

 

Just nuke it up and stir. Mix in with mashed or place on top of split baked taters.

L:  Huge Salad, Leftover Homemade Chili from the night before that was soooo amazing!!  From the 'Vegan Diner' cookbook.  It was easy to make, too.

D:  Salad, Basmati Rice, and "Orange You Glad It's Tofu" made from Chloe's book.   It was pretty good.

It's a mix of fresh corn, tofu and bell pepper (amongst other things). You make small patties and fry them in a skillet with a paper thin oil layer. I took the recipe from Vegan with a Vengeance. Very fast to make and very tasty. So far, besides one peanut cookies recipe, everything I cook from that book is a win.
