Snack: 2 clementines



Lunch: minestrone soup (without pasta), a small piece of baguette, and another clementine



Snack: sliced cucumbers and red peppers with vegan caesar dressing for dipping.



Snack, later: 2 chocolate peanut butter cookies from Eat, Drink and Be Vegan!



Supper: Thai red curry over basmati rice.

Breakfast: whole grain toast w/pb+j and a cup full of frozen blueberries



lunch: Amy's barley soup + a lot of sauteed spinach



snack: lara bar, celery + hummus



dinner: whole grain pasta w/broccoli, asparagus, carrots, and cauliflower cooked up in a pan with olive oil, garlic, salt, pepper, and red pepper flakes. It was crazy good!

This is my favourite way to cook pasta! Next time try a tiny bit of fresh lemon juice (about 1/2 tsp for each serving of pasta). It really enhances all the flavours!

Breakfast: Apple & Cinnamon oatmeal w/ a glass of chocolate soy milk

Snack: Few chocolate chips, some pretzels

Lunch: Cannelloni beans w/ white rice and sprinkle soy cheese (leftovers from dinner)

Dinner: Grilled "chicken" strips w/ lemon, soy buttered pasta, broccoli

Snack: Blueberry Soy yogurt w/ granola



I'm trying to cut down on the soy, probably had one too many soy products today... :\\

Breakfast: An apple and whole wheat toast with peanut butter



Lunch: It was more like snacks. Tortilla chips and salsa, toasted almonds, grapes.



Dinner: Grilled tofu with some sort of rice dish (leftovers from dining out the other night) and a salad.

I've been eating unhealthy all day, which is unusual for me. I guess tortilla chips and salsa aren't too unhealthy.



Breakfast: French fries.



Snack #1: Red tortilla chips and mango peach salsa.



Snack #2: Some Soyatoo whipped "cream" out of the can.



Lunch: Nothing. I got up late so breakfast was really brunch, I guess.



Dinner: ??? (Not sure what I'm going to eat yet, but it's going to be vegan most likely).



Dessrt: Strawberries, vegan sugar and Soyatoo whipped "cream." (Haven't eaten this yet, but that's what I'm going to have.)

Breakfast: berry muesli with seeds, coconut and nuts, bran, and oat milk. A pear.



Lunch: toasted sandwich filled with tomato spaghetti and refried beans. A few olives.



Snack: Apricot and mango soy yoghurt, and a bunch of green grapes.



Snack: Glass of chocolate soy milk, and plain potato chips.



Dinner: Very easy dinner! Thin spaghetti mixed with marinated lentil salad, baby spinach leaves, and chargrilled eggplant and cashew pesto.

Breakfast: Almond milk and Cinnamon Life cereal

Snack: Strawberries and a handful of Cheerios, dry.

Lunch: I brought a Gardenburger Black Bean Chipotle burger, and peas and corn

Possible snack: TBD - maybe popcorn w/ nooch, garlic powder, chipotle and salt

Dinner: TBD - I really have no idea, depends on how lazy I am later. I need a break!

Today... was weird, at least to start...



Breakfast: freshly-popped corn which I grew myself. In a hot-air popper- no margarine or salt. (That stuff is a bit of a pain to remove from the cobs, but its something to do with my hands on the rare occasion when Im watching television.) Maybe 1/8 cup of firm tofu (gotta have my proteen). A big handful of dry-roasted unsalted peanuts. And an apple (most of it anyway- I shared with my rabbits...) And water.



Lunch: A bowl of vegan mushroom, barley, carrot, and celery soup. White rice topped with a black bean and tomato creole sauce- this dish normally comes with a slice of cornbread (presumably non-vegan) and a dollop of sour cream, but I asked them to replace those with a dollop of vegan refried beans. (The owner told me that the black bean burgers she makes from scratch are now vegan- she formerly used egg as a binding agent but uses something different now. Ill DEFINITELY give that a try...

B: I had a wasa multigrain cracker with PB and thinly sliced apples on top



L: Cucumber avocado rolls with multigrain rice, salad greens with shredded carrots and miso/ginger dressing



D: 1/2 PB and J, Strawberries



Snacks: I am LOVING this miso/ginger dressing from whole foods right now, so I cut home some carrots, broccoli, and cucumbers to dip in.



I'm still a little hungry so I'm thinking an orange...hopefully not chips...we shall see



* Whole wheat noodles with tomato sauce...



I feel like I have a hard time making my own, hot vegan meals. I need to work on that!

Yesterday I had:

Breakfast: A piece of fresh bread with Vegemite and Nuttelex, and another with peanut butter. A couple of sugar plums and half a large mango.

Snack: Cup of black tea with oat milk, another sugar plum.

Lunch: Spaghettini mixed with baby spinach leaves, marinated lentil salad, and chargrilled eggplant and cashew pesto (made a big batch for everyone at the office ). Watered-down apple juice.

Dinner (went out with family): A big salad - mixed leaves, cherry tomatoes, grated carrot, mixed beans, spiced potato cubes, fried mushrooms and avocado. With a side of fries.





Today:

Breakfast: Slice of bread with peanut butter, watered-down apple juice.

Snack: Soy flat white coffee

Lunch: An apple, a slice of bread with Nuttelex and Vegemite, some roasted chickpeas, a glass of soy milk.

Dinner (had nibbles at a friend's house, followed by going out for dinner): snacked on olive oil crackers with sweet capsicum nut pesto dip, chargrilled sweet potato, marinated mushrooms, almond-stuffed olives, chilli-orange olives, dried figs, organic red wine.

At dinner I had a green coconut curry of vegetables and steamed rice - very tasty.

Now before bed: a mug of green tea



It's been a weekend of eating!

I find it refreshing and relaxing . I wouldn't touch a coffee before bed (I only drink coffee maybe twice or three times a week anyway), but green tea is all good.

Lunch: a falafel from our local shawarma place: hummus, lettuce, tomatoes, turnip, cucumbers and crispy falafel balls rolled in a pita. Mmmm

Supper: Thai fried rice with ready-fried tofu, carrots, broccoli, bell peppers, onion, garlic, fresh chillies and green beans.

Dinner:Stir fry tofu. So insanely delicious!

Dessert: Homemade Banana bread, a little tough, I think I overmixed it, or maybe the bananas weren't ripe enough?

I have today all planned out:



breakfast: homemade granola with soy yogurt



lunch: leftover Thai fried rice, fried with vegetables and ready-fried tofu



snacks, for throughout the day: half of a dragonfruit, half of a yellow mango, carrot sticks and sliced cucumbers with vegan dip, a banana, and some grapes.



supper: will be phat thai - rice noodles stir-fried with seasonings and tons of vegetables and ready-fried tofu.

Lunch: Spaghetti with cashew and chargrilled eggplant pesto, marinated mushrooms and baby spinach leaves

Snack: mug of strong tea with soy milk.

Snack: glass of plain soy milk. Handful of potato chips.

Dinner: toasted Turkish bread sandwich filled with felafel, rocket, spinach leaves, marinated sweet potato, and caramelised onion bruschetta topping.

Dessert: A few squares of dark chocolate with orange.

So far all I've had is a piece a whole wheat bread but I plan to have a Vegan soup I made by throwing vegetables and beans in a pot for lunch. It is actually pretty good. It's my dad's turn to make dinner. I'm not sure what he's making. I usually substitute the meat products he makes for Tofu, but he doesn't know I'm trying to be a Vegan so I might have trouble if he makes a certain sort of potatoes or something.
