I just joined the 30 day vegan challenge. I was wondering, what do you keep in your frig to create a quick meal?

Chili. Good over brown rice (I make a bunch once a week and keep that in the fridge too), over a baked potato, with some veggies and nutritional yeast in a burrito, or with a side of crackers or bread with spread.



Garbanzo bean salad (a lot of people call it mock tuna) and/or hummus for sandwiches.



Tomato sauce - homemade this time of year but jarred will do. Toss this with extra spices in with canned beans and some of that refridgerator rice and you've got beans and rice. Dump some and some canned beans over a packet of cooked spaghetti squash (I keep these in the freezer) and it's veggie spaghetti.



Tofu. Add some veggies from the freezer and an envelope of sauce mix, dump it over some rice and you've got a quick stir-fry.



I also keep meal-sized freezer bags of leftovers and substantial soups/stews in the freezer for when I don't feel like cooking. And the odd faux meat in the freezer too, for the same purpose.

ve made #11 except with squash, evoo, onions, and a touch of balsamic vin. Super easy- very yum. Change around some of the recipes or go straight from what is there and you'll have a good start

The majority of my meals are quick and don't involve a lot of cooking (although I've recently gotten into vegan baking). One of my favorites is to boil some pasta and open a can of beans. If I'm feeling creative I'll add some veggies or tomato sauce to the mix. Or you could use rice instead of pasta.

I always keep around fresh tomatoes, garlic, pasta, and spinach for a quick pasta. Just sauté it altogether and boil the pasta, you'll be eating in 15 minutes.

Really quick:

-Frozen veg burgers(be careful not all of them are vegan) Boca chik patties are tasty.

-Amy's makes a good frozen burrito with tofu and beans and such

Quickish:

-Fantastic falafel mix(you can toss some random vegatables into the actual mix too) some lettuce, tomato, and Annie's goddess dressing

This one is very fast and easy, and a favorite of mine... arugula and avocado on toasted bread with hummus or cream "cheese".

Hummus! Soooooo easy.....bung garbanzo beans, onion, tahini, garlic and lemon in the food processor...whizz...I eat hummus with everything....on bagels, on tortilllas, on a baked potato...



I also tend to make up batches of soup every Monday to do my lunches for the week....this week its roasted garlic and cannellini bean!

Refried beans make a good meal. As long as you have some cooked beans on hand (I always have some slow-baked hanging around, since it's so much cheaper than canned), you can eat. Mush around the beans ans spices in a non-stick pan, serve with toast.



Black beans + salsa = Mexican refried beans



White beans + garlic + spinach = Tuscan refried beans



White beans + caramelized onions + BBQ sauce = Refried baked beans



Chickpeas + garlic + lemon juice + curry = Indian refried beans



Etc.
