Cool Vegan Cuban Dinner

My friend went to Cuba recently, and I want to make a vegan Cuban dinner. Does anyone have any ideas, please? Thanks.

Anytime I think I'm perfect, I remember that my cousin lives on an island, and I've never walked over to visit her.

I can't remember if I've ever made this, but it's the first thing that popped into my head:

Cuban Black Beans & Rice

I'd check out the recipes linked to the the pics that appeal the most (this is exactly what I do when seeking specific recipes - it works for me). Some will no doubt have animal products in but be easy to switch/eliminate/avoid.

I'm interested to see what you come up with, gonna follow this.
