I was at a festival called Vegfest; it's the national Vegan event of the year. I really had a lot of fun and met some great new people

I also tried seitan for the first time, it's scary how much the texture reminds me of meat! I was almost put off it; but it made me think about how easy a lot of junk food could be replaced with seitan, if only people were willing..

And I had vegan key lime pie made with cashews and coconut cream, which surprised me because it was so much more delicious than normal cheesecake. Would definitely recommend

I bought a ''hail seitan'' t-shirt too; one I've wanted for years!

I'll definitely go again next year.

Nothing tastes as good as compassion feels.

I wore my "Vegan Proudly Powered by Plants" shirt to a few stores while out running errands. got a few stares lol.

I had my sister over to celebrate her birthday too, and I made homemade split pea/carrot dip, and we had matzo crackers with it, and a big garden salad and homemade pumpkin cake with vegan cream cheese frosting, lots of cake...

Yeah, that's something I struggled with for a long time myself. It seems like what qualifies as good mac and cheese is VERY subjective because there are so many recipes other people loved I was just kind of 'meh' about and also recipes others hated that I liked so I think you just have to find your perfect vegan mac through trial and error.

I did not find a right topic, but I think it will be okay if I express some of my joyful feelings here...

Recently I attended a conference (not vegan or anything like this related) which included business lunch. And during a registration, there were two options for lunch - vegetarian or vegan meals!
I cannot tell what a nice surprise it was for me. It was not a very fancy lunch though, - they served me a big salad with veggies and tofu!

And today I registered for another professional conference that will happen in Arizona which included lunch, and there again was an option to select either vegetarian or vegan meal.
It just was so touching that I almost got emotional .
