I don't have much advice for you right now. I was just thinking, one easy cheesy thing I like is nutritional yeast mixed up with ground flax seeds, cashew or almond milk, salt, pepper and garlic. Let it sit for a little bit so the flax can thicken it up. I put this on cheeseless pizza or just on toast. It sounds weird, but it's good. It makes for good Mac and cheese, too.
