I missed my usual Thanksgiving meal so I decided to make it on the weekend.  I woke up wanting it for breakfast, so I figured, what the heck?

 

The innovation this year was beans.  I wanted a protein to counter all that starch, and all I had was beans.  I found a way to flavor them so they complimented the Thanksgiving spices!  I am so psyched!

I never thought to just mash beans and top with gravy! I'd love that!

That's a Tofurky vegan roast. The stuffing in those is amazing. Wild rice stuffing is the best.
